Central Coast Wine Tours
Wine enthusiasts seeking personal, professional and educational winery visits in California's Central Coast will benefit from our over 20
years of relationships and experiences in the wine industry. Private wine tastings, special visits, and a real look at the terroir and
people that shape the region are what you will experience. We will escort you on a tour of three to four specially selected wineries, and
arrange for a wine country lunch or dinner as if you were one of the locals.

Winemaker Dinners
Enjoy the flavors and ambiance of the wine country over dinner in a unique and memorable California vineyard setting. We will assist in
selecting the perfect site and the tastiest menu enhancing the flavors of the region. From elegant multi coursed dinners in a cave to
barbecues with panoramic vineyard vistas, we will assist you in celebrating wine country! This will be a food and wine experience
your senses will not forget!

Wine Tasting Receptions
Let us bring the wine tasting to you. For larger groups and conferences on the Central Coast we will bring representatives from local
wineries to your conference location. You couldn't ask for a more perfect way to introduce your attendees to a taste of the local wine country.
We provide winery representatives, wine, wine glasses and a wine tasting program. Winery participation varies depending on season and number
of attendees. A minimum of 75 attendees required.
2 - 3 hours
Explore the Roots of the Wine
Have you ever wondered what it took to grow the grapes that make the wine? Join a local viticulturist in the vineyard and learn what true
vineyard life is about. This presentation will cover what it takes to establish a vineyard, how grapes are planted and how to nurture them
into a beautiful wine. Your appreciation and respect for wine will only be enhanced once you spend some time with the vines. Wine tasting
or lunch can be arranged as part of the presentation.
2 - 3 hours
Team Blending
Many regions around the world depend on more than one grape variety to comprise the finished product. We will focus on a certain region or style
of wine, explore the individual grape varietals utilized in that region and take a look at a few classic examples. Now that you have a taste of the
regions flavors it's time for you to blend your own version of the wine. Each team will be supplied the tools to create their own wine and take home
a sample of their efforts at the end of this interactive exercise.

Classes
A Logical Approach to Food & Wine
Who made up the rules about food and wine? This power point presentation developed by Master of Wine, Tim Hanni, provides a tactile discovery
of the ying and yang of food and wine. You will be lead through a progression of various wines and foods to determine how aroma and taste affect
flavor. By utilizing your senses you will make some new discoveries and appreciate the delicious balance of wine and food.

NoFear Wine 101
This two-hour seminar covers the basics and will leave you feeling confident and ready to begin your journey into the world of wine. You will
learn how to correctly open and pour a bottle of wine, plus choose the right glass. Discover how to taste, analyze, and describe the wine's appearance,
smell (nose), flavor and finish with confidence. You will uncover the basic differences between Sauvignon Blanc, Chardonnay, Pinot Noir and
Cabernet Sauvignon. In addition, we'll share some suggestions for food and wine pairing.
1 1/2 - 2 hours
Component Tasting-Threshold Evaluation
This insightful seminar focuses on wine and its essential components - sugar, alcohol, acid and tannins - and what they contribute to a fine wine.
It is a fun and informative way to learn what experts mean by "balance" in wines. We will help you understand your palate by showing you why some
wines appeal to you more than others. You will learn how and why you perceive sweet, hot (alcohol), acid, and tannins differently than someone else.
Everyone has a different "threshold"; learn your basic wine thresholds and you are on the way to becoming a skillful wine taster.

Cooking With Andre
Andre Averseng and his wife Christina met while Andre was teaching at a culinary school in Southern California. Now owners of their French café and
catering company in Paso Robles they find time to share their talents. Cooking demonstrations and classes range from pastry, tapas, appetizers, sauces and
paella demonstrations to hands on donning an apron and joining the chef over the stove. Finish with a glass of local wine to enjoy with your new skills and
tasty creations.

Wine and Cheese
Is there an art to complement wine with cheese, or is it a matter of luck? You can find out in this interactive session as we review the basic
cheese families and their reactions to wine. Explore the sensory experiences of cheese and wine while understanding some of the basic principals to
serving and storing cheese.

Costs depend on attendance and availability. Transportation is additional. Wine and food is included with all events, seminars and tours unless
otherwise stated. All wine experiences and education seminars can be modified to most any budget and time frame. Specially crafted events can also
be tailored to meet most any event goals and objectives.
